5 Traditional Spanish Meals You Need To Start Making


Potatoes with sauce. Basically the Spanish version of poutine. No, I’m not kidding.

– Olive oil
– 1/2 small red onion, finely diced
– 2 cloves garlic, finely chopped
– 1 tablespoon smoked paprika
– 3/4 cup prepared mayonnaise
– 1 large plum tomato, halved, seeded and roasted until soft
– Few dashes hot pepper sauce (recommended: Tabasco)
– Splash aged sherry vinegar
– Salt and freshly ground black pepper
– 4 large Russet potatoes, parboiled, peeled and cut into 1-inch cubes
– Flat-leaf parsley leaves

– 1 tbsp olive oil
– 1 onion, chopped
– 1 tsp each hot smoked paprika and dried thyme
– 300g paella or risotto rice
– 3 tbsp dry sherry or white wine (optional)
– 400g can chopped tomatoes with garlic
– 900ml chicken stock
– 400g bag frozen seafood mix
– juice ½ lemon, other half cut into wedges
– handful flat-leaf parsley roughly chopped

CROQUETAS (Ham & Cheese)

Think melty hash browns filled with cheese and ham. Now pick your jaw up off the floor.

– 25g butter
– ½ small onion, finely chopped
– 50g plain flour
– 250ml milk
– 140g sliced smoked ham, diced
– 50g mature cheddar, coarsely grated
– 50g Gruyère, finely grated
– 1 tsp Dijon mustard
– 2 tbsp double cream

Coating: 2 large eggs, 50g plain flour, 140g fine dried breadcrumbs, sunflower oil- for deep frying

– 2 lbs ripe juicy tomatoes
– 1 garlic clove
– 1⁄2an onion, white type not sweet
– 1 green sweet pepper
– 1 cucumber, about 6-7 inches long
– 1⁄4teaspoon  ground cumin
– 3 tablespoons  red wine vinegar
– 1⁄2tablespoon  salt
– 1 cup virgin olive oil

– 1/2 cup olive oil
– 2 pounds baking potatoes, peeled and cut into 1/4-inch slices
– salt and pepper to taste
– 2 tablespoons olive oil
– 2 onions, sliced into ring
– 6 eggs
– 1 roasted red pepper, drained and cut into strips
– 3 ounces Spanish serrano ham, chopped
– 2 tablespoons chopped fresh Italian parsley
